In the rolling heart of Pokolbin, where gum trees shimmer in the afternoon light and magpies announce the dawn, stands one of the Hunter Valley’s most characterful wineries — Pepper Tree Wines. From its charming, tree lined estate to the quietly confident wines that emerge from its cellars, Pepper Tree is a story of curiosity, craftsmanship, and an enduring respect for land.

A Vision Born from the Earth

Pepper Tree Wines was established in 1991, but its origins begin much earlier — not in a vineyard, but in the mind of John Davis, a geologist whose fascination with soil and structure led him from the energy sector into viticulture. Davis had spent years studying the way the earth holds secrets beneath its surface, and when he turned his attention to wine, that same scientific curiosity became his compass.

Instead of relying solely on the historic vineyards of the Hunter, Davis took a bold approach. He sought out land across multiple regions — each with distinct climates and geologies — believing that great wine begins with the right soil. Over the years he acquired vineyards in Orange (a cool-climate haven high on the slopes of Mount Canobolas), Wrattonbully, and Coonawarra in South Australia, while maintaining his spiritual home in the Hunter Valley.

This geological perspective shaped the winery’s identity. “The best of four worlds” became more than a slogan; it was a guiding philosophy — a recognition that terroir diversity gives a winemaker the palette of an artist.

The Heart of Hunter Valley

The Pepper Tree estate in Pokolbin captures everything that’s beloved about the Hunter. The grounds are lush, framed by manicured gardens and broad pepper trees that whisper in the wind. The cellar door feels personal rather than polished — a reflection of the family-owned ethos that defines the brand. It’s a place where the old and the new meet gracefully. Traditional varieties like Semillon and Shiraz are treated with reverence, yet the winemaking style is contemporary — vibrant, textural, and confident in its expression of place.

Four Vineyards, Four Personalities

Each of Pepper Tree’s vineyard regions brings something distinctive to the bottle:

  • Hunter Valley (NSW) – The spiritual home. Its warm days and maritime breezes nurture Semillon and Shiraz with subtlety and structure. These are wines of restraint and longevity, often deceptively light in youth but capable of astonishing depth with age.

  • Orange (NSW) – Sitting over 800 metres above sea level, Orange delivers elegance. The cooler climate produces whites with perfume and tension — Chardonnay, Riesling, and Sauvignon Blanc that hum with acidity and minerality.

  • Wrattonbully (SA) – A lesser-known treasure south of Coonawarra, with limestone-rich soils and gentle slopes. From here come Cabernet and Shiraz with lifted aromatics, dark fruit, and a certain quiet power.

  • Coonawarra (SA) – Legendary red-wine country. Pepper Tree’s vineyards here give structure and gravitas to the blends — the “bones” that hold the flavour together. The terra rossa soils over limestone are world-famous for good reason.

Together, these sites form a winemaking playground that few boutique producers could dream of — a network of vineyards connected by one unifying purpose: to let the land speak.

The Winemaking Spirit

The Pepper Tree team has long been a blend of talent and tenacity, guided by acclaimed winemaker Jim Chatto. With over 30 years of winemaking experience, Jim Chatto, one of Australia’s most respected winemakers has returned to Pepper Tree Wines as a consultant. Formerly Chief Winemaker from 2007–2014, Jim helped define Pepper Tree’s elegant, regional style and guided it to multiple trophies, including Best Red Wine at the Hunter Valley and Limestone Coast Wine Shows. Working alongside Managing Director John Davis, he’ll support the winery’s evolution across its Hunter Valley, Orange, Coonawarra, and Wrattonbully vineyards, and help launch its first Barossa wine in 2025. Founder of Chatto Wines and a Len Evans Scholar, Jim brings deep expertise and vision.

A Taste of the Range

Pepper Tree’s lineup is broad, yet unified by elegance and drinkability. The Varietal Series offers approachable wines that showcase fruit character, while the Limited Release and Single Vineyard ranges dive deeper into site expression and texture.

  • Semillon remains a cornerstone crisp, citrusy, and long lived, echoing the classic Hunter style but with a touch more generosity in its youth.

  • Chardonnay from Orange brings tension and brightness, balancing stone fruit richness with cool climate finesse.

  • Shiraz tells multiple stories: soft and peppery from the Hunter, dark and brooding from Wrattonbully, and stately when blended with Coonawarra fruit.

Each bottle reflects a careful hand and a refusal to rush — wines that are as comfortable at a backyard barbecue as they are at a fine dining table.

Recognition and Respect

Over the years, Pepper Tree Wines has earned an enviable list of accolades — not just for its wines, but for the experience it offers. Its cellar door was crowned Hunter Valley Cellar Door of the Year, while its Semillons have taken top honours at regional and national shows, including the Halliday Wine Companion’s “Semillon of the Year” for the 2013 Tallawanta Vineyard release.

More recently, its Verdelho and Shiraz have continued to collect gold medals, reaffirming the winery’s consistency across varieties and vintages. Yet ask anyone at Pepper Tree, and they’ll tell you awards are just a reflection of a deeper truth — that great wine is grown, not made.
