Description
First produced in 1997 and often described as a black forest gateau in a glass, it is almost the perfect descriptor for this rich, powerful and luscious Sparkling Red that is one of the cornerstones of Fox Creek’s portfolio. The powerful fruit flavour profile of the Shiraz and rich structural tannins of the Cabernet Sauvignon, complemented by the focus and herbal lift of the Cabernet Franc, combine to give the wine an exquisite balance and drinkability.
BOUQUET A complex nose of red cherry, raspberry, plum and fruit cake combined with spicy notes such as cinnamon, vanilla, toasted nuts and chocolate.
PALATE A smooth, juicy palate of raspberry, red cherry and strawberries and cream completed with rich christmas cake, milk chocolate and roasted nuts. The finishes clean with crunchy tannins and balanced acidity.
BLEND 72% Shiraz, 20% Cabernet Sauvignon, 8% Cabernet Franc.
“Deep, dark red with a purple trace and the bouquet shows black fruits, graphite, earth and rocky/ironstone mineral notes. The full-bodied palate is ample and rich with velvet softness. 92 points” Huon Hooke, Gourmet Traveller Wine, April 2015
“This quintessentially Australian-style wine is rich and soft in texture with a silky palate that oozes raspberries and black cherries.” Neil Perry 2016
